These delicious homemade coffee cookies are flavored with just the right amount of dark roast coffee and dark chocolate, making them a perfect treat for all the coffee lovers in your house.

But what good is a great coffee cookie recipe if you're too busy to actually make it? Well, these are super easy to make—they come together in just half an hour.

Just be forewarned—they're so delicious, you'll be tempted to eat all 3 dozen yourself.

Dark Chocolate Coffee Cookie Recipe

Makes:

About 36 Cookies (3 Dozen)

Ingredients:

  • 1 ½ cups unsalted butter, softened at room temperature
  • ½ cup sugar
  • 1 ½ cup dark brown sugar, packed
  • 4 cups all-purpose flour
  • 3 large eggs
  • 1 tbsp vanilla extract
  • 4 tsp cornstarch
  • 2 tsp baking soda
  • 1 teaspoon salt
  • 2 tbsp ground dark roast coffee
  • 1 cup dark chocolate chips
  • (Optional, but recommended!) 1 cup macadamia nuts or chopped walnuts

Instructions:

  1. Preheat your oven to 350.
  2. In a large mixing bowl, whisk together all purpose flour, salt, baking soda, and coffee grounds. Since the other ingredients are white, use the coffee grounds to gauge when everything is well whisked.
  3. Using an electric mixer, beat the butter, brown sugar, and white sugar together in a bowl until the mixture is fluffy. Add vanilla extract and eggs and beat together for 1-2 minutes or until everything is well-mixed.
  4. Gradually add in your flour, baking soda, salt, and coffee mixture.
  5. If you have chocolate chips or nuts, now's a good time to stop eating them, and mix them in with the other ingredients until everything looks well distributed.
  6. Line a baking sheet with parchment paper and use either a tablespoon or a medium cookie dough scoop to plop down a total of 3 dozen cookies (12 per baking sheet, or however many will fit while allowing enough space between them to spread out)/
  7. Bake cookies on the sheet for 10 - 13 minutes.
  8. Wait about 5 minutes for them to cool on the baking sheet, then allow them to cool on a wire rack before eating—then enjoy!

Tips:

  • In the unlikely event that you have any uneaten cookies, store them in an airtight container.
  • If you're not a fan of dark chocolate, or just want to put your own spin on the recipe, you can try substituting white chocolate chips, semi-sweet morsels, or even raisins.
  • If you find that your coffee cookies are spreading out too much while baking, try chilling the dough in the fridge for 30 minutes before baking. This will help them to keep their shape.
